New Goa Restaurant Revives A Panjim Classic –  For many Goans, the ‘good old days’ mean Hotel Mandovi. People knew this iconic Panjim landmark for its great food, warm hospitality, and timeless elegance It closed in 2019. Its spirit lives on through Sabores, a new restaurant in Bambolim by Akshay Quenim from the same family.

Sabores doesn’t try to copy the past. Instead, it brings back the feel and flavours of classic Goa in a fresh, modern way. The restaurant is set inside Club de Palma. It has a relaxed, classy vibe with Portuguese-style design, cosy interiors, and a poolside setting that feels special and welcoming.

The food is where the magic really happens. Sabores serves authentic Goan and Indo-Portuguese dishes like crab xec xec, bacalhau, xacuti, cafreal, sannas, and traditional Goan breads. There are modern twists and creative cocktails inspired by Goan flavours. Classic desserts bring comfort and nostalgia.

Chef Subhash, who once cooked at the legendary Rio Rico restaurant in Hotel Mandovi, is part of the kitchen, keeping the original taste and stories alive.
